MUSHROOM & MOZZARELLA PIZZA WITH TRUFFLE INFUSED OIL

A delicious and moorish home made pizza. One of my favourite flavours!!
Buy a good quality pre-made pizza base and off you go. You can also use pita bread or tortillas for the base too.

Use an oven or BBQ. The bbq works so well to make the base super crispy.

Serves 4

Ingredients:

  • 1 pizza base or pita bread base

  • 2 tbsp tomato paste or passata

  • 1 cup mozzarella, grated

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 4 cups mushrooms (button, flat, cup or brown), thickly sliced

  • 2 cloves garlic, finely chopped

  • Salt & Pepper

  • 1 large fresh mozzarella ball, sliced

  • 6 sprigs Rosemary

  • 2 tbsp truffle infused olive oil (I used Cobram Estate).

Method:

  1. Preheat oven or BBQ to 200 degrees.

  2. Spread the pizza base or pita bread with the passata and grated mozzarella. Bake for 15-20 mins to get the base heated and a little crispy.

  3. Meanwhile, heat a medium frying pan on med/high heat. Add the olive oil. Add the chopped mushrooms and butter and sauté for 5-7 mins, stirring. In the last

    minute, add the chopped garlic and stir through the mushrooms. Season well.

  4. Scatter the warm mushrooms onto the pizza base. Add the sliced mozzarella pieces to the pizza. Sprinkle on some rosemary leaves. At this point, you can serve it like this or grill the pizza for 5 mins on a high heat. Drizzle the truffle infused olive oil over the pizza, season well and serve.

If you don’t like truffles, you can use a normal olive oil to drizzle over the pizza 🍕
