PIZZA FLAVOURED QUESADILLA

This very quick and very easy quesadilla dish is a perfect option for when you’re in a hurry, but you feel like something comforting.

Whip it up in 15 mins and change up the fillings to suit your preferences or the kids preferences.

Serves 1:

Ingredients:

  • 1 large tortilla wrap

  • 2 tbsp tomato paste

  • 1 cup shredded chicken (from a store bought chook)

  • 1/2 cup spinach, chopped

  • 1 tbsp red onion, finely chopped

  • 1 tbsp roasted red peppers, chopped (from a jar)

  • 1 cup of tasty cheese, grated (extra for on the top)

  • 1 tsp olive oil or butter

Method:

  1. In a bowl, mix together the tomato paste, chicken, spinach, red onion, red peppers and tasty cheese.

  2. On one half of the tortilla, spread the mix and too with extra cheese. Fold over the other half.

  3. Preheat a fry pan on low-med heat. Add the olive oil or butter. Add the quesadilla and cook on one side for about 5 mins. If it’s colouring too much, turn the heat tight down. Flip and cook the other side until golden and the cheese is starting to ooze. Yum!!!!
