This very quick and easy quesadilla is the perfect option for when you’re in a hurry, but you feel like something comforting. Whip it up in 15 minutes and change up the fillings to suit your preferences.
1cupcooked chickenshredded (from a store bought chook)
2tablespoonstomato paste
1/2cupbaby spinachchopped
1tablespoonred onionfinely chopped
1tablespoonjarred roasted red pepperschopped
1cuptasty cheesegrated, plus extra for topping
1tortillalarge
1teaspoonextra virgin olive oil or butter
Instructions
In a bowl, mix together the chicken, tomato paste, spinach, red onion, red peppers and tasty cheese.

On one half of the tortilla, spread the chicken mix and top with some extra grated cheese. Fold over the other half.

Place a frying pan over medium–low heat. Add the olive oil or butter. Add the quesadilla and cook on one side for about 5 minutes. If it’s colouring too much, turn the heat right down. Flip and cook the other side until golden and the cheese is starting to ooze. Yum!
