Tuna, Corn & Dill Mix

I love this mix. The dill and cornichons add great flavour. It’s so versatile and can be served however you like, but my favourite ways are with sourdough toast, on rice thins, as a dip with crackers or inside cucumber skins.

Ingredients
 
 

  • 200 g canned tuna in oil
  • 1 cup canned corn drained
  • 2 tablespoons cornichons finely chopped
  • 2 tablespoons dill finely chopped
  • 2 spring onions finely chopped
  • 1 tablespoon greek yoghurt
  • 1 tablespoon mayonnaise
  • 1/2 lemon juice squeezed
  • 1 teaspoon dried chilli flakes or sriracha sauce
  • sea salt & cracked black pepper

Instructions
 

  • In a large bowl, place all the ingredients and mix well. Season to taste. Feel free to add more chilli or lemon, depending on your preferences.
