Baked Tortillas With Tuna & Hummus Yoghurt
A lunch recipe I’ve been making for years!! We sometimes have it for dinner too, when we have nothing in the fridge!!!It’s quick, easy and healthy!!!
Ingredients
- 4 tortillas mini flour, or GF corn tortillas
- olive oil cooking spray
- 2 tablespoons hummus
- 2 tablespoons greek yoghurt
- 185 g canned tuna in olive oil or brine
- 1/2 cup cherry tomatoes sliced
- 1/2 avocado sliced
- 2 spring onion sliced
- 1/2 cup bocconcini cheese halved (or feta)
- 1/2 bunch mint finely chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice squeezed
- sea salt
- cracked black pepper
Instructions
Method:
- Preheat oven to 160 degrees. Lightly spray one side of the tortilla and prick several holes in the tortilla with a fork. Bake for 8-10 mins until lightly golden. Remove and cool.
- In a small bow, mix the Greek yoghurt and the hummus together. Season well.
- For the dressing: mix the mint, olive oil and lemon juice in a bowl/small jug. Season.
- To serve: Spread the tortilla with a generous amount of hummus/yoghurt mix. Top with cherry tomatoes, avocado, spring onion, bocconcini and tuna. Drizzle with the mint dressing.
- Tip: You can swap out the tuna for salmon, chicken or beef.
