FIFTEEN-MINUTE SIX INGREDIENT CHICKEN MIX

This amount will make enough to serve one person for lunch over 3-4 days.

Ingredients:

  • 3 cups cooked chicken, chopped

  • 3 celery ribs, finely diced

  • 3 spring onion, finely sliced

  • 1/3 cup silvered almonds, toasted

  • 2 tbsp kewpie mayonnaise

  • 2 tbsp natural yoghurt

  • Extra toasted almonds and rocket to serve.

Method:

  1. To a bowl add the cooked chicken, celery, spring onion, toasted almonds, kewpie Mayo and natural yoghurt. Mix it all together and season really well (sorry forgot to include salt and pepper in the six ingredients ).

  2. See how you like your mix, you can always add more Mayo or yoghurt if you want it to be a creamier mix. You can also just use mayonnaise, I find that kewpie Mayo is a little overpowering just on its own, which is why I add the natural yoghurt to lighten up the mix.

    It will last 3-4 days in the fridge if stored in an airtight container.

    Serve it on sourdough, in a wrap or sandwich or just with lettuce cups
