Healthy Chicken, Rice & Edamame Salad
Such a wholesome and satisfying meal. Perfect for lunch or dinner!! To save time you can buy the sachet brown rice, a whole cooked chicken and a slaw packet – the meal will be made in no time at all.
Ingredients
- 3 cups brown rice cooked
- 2 tablespoons rice wine vinegar
- 1 cup red cabbage very finely shredded
- 1 lebanese cucumber sliced
- 1 carrot large, grated or peeled long ways
- 2 cups chicken chopped, cooked
- 1 cup edamame
- 1 avocado sliced
- 3 spring onion finely sliced
- 2 tablespoons sesame seeds black
- 2 tablespoons shallot medium, fried, optional
Dressing:
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce light
- 1 tablespoon fish sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon brown sugar
Instructions
Method:
- To a large bowl add brown rice and rice wine vinegar and stir well. Then add red cabbage, cucumber, carrot, cooked chicken, edamame beans, avocado, spring onion and black sesame seeds. Toss ingredients together.
- For the dressing: mix together all ingredients and adjust to taste. Pour the dressing over the salad and toss through.
