HEALTHY CHICKEN, RICE & EDAMAME SALAD

Such a wholesome and satisfying meal. Perfect for lunch or dinner!! To save time you can buy the sachet brown rice, a whole cooked chicken and a slaw packet - the meal will be made in no time at all.

Serves 2

Ingredients:

  • 3 cups cooked brown rice

  • 2 tbsp rice wine vinegar

  • 1 cup red cabbage, very finely shredded

  • 1 lebanese cucumber, sliced

  • 1 large carrot, grated or peeled long ways

  • 2 cups cooked chicken, chopped

  • 1 cup edamame beans

  • 1 avocado, sliced

  • 3 spring onion, finely sliced

  • 2 tbsp black sesame seeds

  • 2 tbsp fried shallots (optional)

    Dressing:

  • 2 tbsp sesame oil

  • 2 tbsp light soy sauce

  • 1 tbsp fish sauce

  • 1 tbsp rice wine vinegar

  • 1 tbsp brown sugar

Method:

  1. To a large bowl add brown rice and rice wine vinegar and stir well. Then add red cabbage, cucumber, carrot, cooked chicken, edamame beans, avocado, spring onion and black sesame seeds. Toss ingredients together.

  2. For the dressing: mix together all ingredients and adjust to taste. Pour the dressing over the salad and toss through.
