Healthy Chicken, Rice & Edamame Salad

Ingredients
  

  • 3 cups brown rice cooked
  • 2 tablespoons rice wine vinegar
  • 1 cup red cabbage very finely shredded
  • 1 lebanese cucumber sliced
  • 1 carrot large, grated or peeled lengthways
  • 2 cups cooked chicken chopped
  • 1 cup edamame beans
  • 1 avocado sliced
  • 3 spring onions finely sliced
  • 2 tablespoons sesame seeds black
  • 2 tablespoons fried shallots optional
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce light
  • 1 tablespoon fish sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon brown sugar

Instructions
 

  • Place the brown rice and rice wine vinegar in a large bowl and stir well. Then add the red cabbage, cucumber, carrot, chicken, edamame beans, avocado, spring onion and black sesame seeds. Toss everything together.
    3 cups brown rice, 2 tablespoons rice wine vinegar, 1 cup red cabbage, 1 lebanese cucumber, 1 carrot, 2 cups cooked chicken, 1 cup edamame beans, 1 avocado, 3 spring onions, 2 tablespoons sesame seeds
  • For the dressing: Mix all the ingredients in a small bowl and adjust to taste. Pour the dressing over the salad and toss through. Serve the salad topped with fried shallots if you like.
