Place the brown rice and rice wine vinegar in a large bowl and stir well. Then add the red cabbage, cucumber, carrot, chicken, edamame beans, avocado, spring onion and black sesame seeds. Toss everything together.
3 cups brown rice, 2 tablespoons rice wine vinegar, 1 cup red cabbage, 1 lebanese cucumber, 1 carrot, 2 cups cooked chicken, 1 cup edamame beans, 1 avocado, 3 spring onions, 2 tablespoons sesame seeds
For the dressing: Mix all the ingredients in a small bowl and adjust to taste. Pour the dressing over the salad and toss through. Serve the salad topped with fried shallots if you like.
