CHEESY ARTICHOKE & SPINACH DIP

So rich, creamy and ADDICTIVE!!!!
A real crowd-pleaser when you’re having guests over.
Serves 8 (as a starter)
Ingredients:
325g cream cheese, softened
1/4 cup sour cream
1 tablespoon mayonnaise
1 teaspoon garlic, minced or very finely chopped
3/4 cup parmesan cheese, grated
1/4 cup mozzarella cheese, grated
230g jar marinated artichoke hearts, drained
1.5 cups frozen spinach, thawed and squeezed of liquid
1 teaspoon sea salt flakes
1 teaspoon black pepper
Method:
Preheat oven to 180 degrees Celsius.
In a large bowl, add the cream cheese, sour cream, mayonnaise, garlic, grated parmesan and grated mozzarella. Stir this well with a spatula or wooden spoon. Then add the artichoke hearts and the thawed spinach. Season well and fold everything through gently.
Use a small baking/roasting dish and fill the dish with the artichoke mix. Use a spatula to flatten and spread the mix so it fills the dish. Bake in the oven for approx. 20-25 mins. It should be golden and bubbly on top.
Serve with crackers or a crusty baguette.
