Bolognese With Hidden Veggies
This bolognese is perfect for the whole family. I add grated carrot and zucchini and it can barely be seen when the dish is done. My girls don’t even flinch when they have this – it basically tastes the same, but includes some veggies.

Ingredients
- 1 tablespoon extra virgin olive oil
- 1 brown onion large, finely diced
- 3 cloves garlic finely chopped
- 600 g beef mince you can also use pork or veal mince
- 1 tablespoon italian herbs dried
- 3 bay leaves
- 2 carrots grated
- 1 sweet potato small, grated
- 1 zucchini large, grated
- 800 g canned crushed cherry tomatoes
- 2 tablespoons tomato paste
- 1 cup chicken stock or beef stock
- sea salt & cracked black pepper
- cooked pasta, zoodles or roasted veggies to serve
Instructions
- Place a large saucepan over medium heat and add the olive oil. Add the onion and garlic and sauté for 2–3 minutes until fragrant and translucent. Add the mince and cook, breaking it up with a wooden spoon, for 5–8 minutes. - Add the grated carrot, sweet potato and zucchini and stir through for a few minutes.2 carrots, 1 sweet potato, 1 zucchini
- Add the canned tomatoes and tomato paste and mix through for 5 minutes. Add the stock and stir well. Bring to the boil, then turn down and simmer for 20–30 minutes until thickened. Season well.800 g canned crushed cherry tomatoes, 2 tablespoons tomato paste, 1 cup chicken stock
- Serve the bolognaise on any pasta you like. For a healthier/lighter option, serve on zoodles or with roasted vegetables.cooked pasta, zoodles or roasted veggies
