BOLOGNAISE - WITH HIDDEN VEGGIES

This bolognaise is perfect for the whole family. I add grated carrot and zucchini and it can barely be seen when the dish is done. My girls don’t even flinch when they have this. Basically tastes the same, but includes some veggies.

Serves 4-6

Ingredients:

  • 1 tbsp olive oil

  • 1 large onion, finely diced

  • 3 garlic cloves, finely chopped

  • 600g (approx) beef mince (you can also use pork or veal mince)

  • 1 tbsp dried Italian herbs

  • 2 carrots, grated

  • 1 small sweet potato, grated

  • 1 large zucchini, grated

  • 400g can crushed tomatoes

  • 400g can cherry tomatoes

  • 2 tbsp tomato paste

  • 3 bay leaves

  • 1 cup chicken or beef stock

  • Salt & Pepper

Method:

  1. Place a large saucepan onto medium heat. Add olive oil. Add the onion & garlic and sauté for 2-3 minutes until fragrant and translucent. Add the beef mince and break up with a wooden spoon for 5-8 minutes. Add the dried herbs, bay leaves and stir for 2-3 minutes.

  2. Add the grated carrot, sweet potato & zucchini and stir through for a few minutes.

  3. Add the tinned tomatoes and tomato paste and mix through for 5 minutes. Add the beef or chicken stock and stir through. Bring to the boil and then turn down and simmer for 20-30 minutes (until thickened). Season well.

Serve the bolognaise on any pasta you like. For a healthier/lighter options, serve on zoodles or with roasted vegetables.
