Roasted Red Pepper, Feta & Chorizo Dip
Bursting with flavour and so so yummy! Spice up your starters next time you have people coming around. You’ll all enjoy this delicious dip.
Ingredients
- 200 g feta cheese
- 330 g jarred roasted red peppers drained
- 1/3 cup cream cheese
- 2 tablespoons extra virgin olive oil plus extra for serving
- 1 tablespoon honey
- 1 teaspoon red chilli flakes plus extra for serving
- 1 chorizo finely diced
- 1 tablespoon parsley leaves finely chopped
- sea salt
Instructions
- In a food processor, place the feta cheese, roasted red peppers, cream cheese and olive oil. Blend until well combined. Add the honey and chilli flakes and pulse for 3–5 seconds.
- Place a small frying pan over medium heat. Add the chorizo pieces and cook for about 5 minutes, giving the pan a shake every now and then.
- To serve, spread the red pepper dip into a wide shallow bowl. Add the chorizo pieces on one side. Sprinkle over the chopped parsley, drizzle with some more olive oil and sprinkle with chilli flakes (if desired) and a pinch of salt. Serve with toasted baguette.
