ROASTED RED PEPPER, FETA & CHORIZO DIP

Bursting with flavour and so so yummy!!! Spice up your starters next time you have people coming around. You’ll all enjoy this delicious dip.

Serves 6 as a starter

Ingredients:

  • 200g feta cheese

  • 330g jar roasted red peppers, drained

  • 1/3 cup cream cheese

  • 2 tbsp extra virgin olive oil

  • 1 tbsp honey

  • 1 tsp red chilli flakes

  • 1 chorizo, finely diced

  • 1 tbsp parsley, finely chopped

  • Extra olive oil, sea salt and red chilli flakes for serving.

Method:

  1. In a food processor, add the feta cheese, roasted red peppers, cream cheese and olive oil. Blend until well combined. Drizzle in the honey and 1 tsp of chilli flakes and pulse for 3-5 seconds.

  2. Place a small/medium frying pan onto medium heat. Add the chorizo pieces and cook for about 5 minutes, giving the pan a shake every now and then.

  3. To serve: spread the red pepper dip into a wide shallow bowl. Add the chorizo pieces on top to one side. Sprinkle over the chopped parsley, drizzle some more olive oil and chilli flakes (optional) and add a pinch of salt.
