TOASTED CIABATTA WITH SALAMI, CHERRY TOMATOES, OILVES & FETA

Serves 2

Ingredients:

  • 4 pieces of ciabatta loaf (or Turkish bread)

  • Olive oil spray

  • 4 tbsp tomato paste (pizza flavour)

  • 4 tbsp ricotta

  • 2 cups spinach

  • 16 pieces of chilli salami

  • 1/2 cup cherry tomatoes

  • 1/2 cup kalamata olives

  • Salt & Pepper

  • 2 tbsp mixed herbs, finely chopped

  • 125g of danish feta, crumbled

  • Olive oil, to drizzle

  • Fresh basil leaves for garnish

Method:

  1. Preheat the oven to 180 degrees. On a lined baking tray, spread the cherry tomatoes and olives out and drizzle with some olive oil and season well. Roast for approx 30 mins until soft. Set aside.

  2. Cut the bread slices, spray with some olive oil spray and toast in the toaster or grill for 5 mins.

  3. Lay the toasted bread slices out on a tray. Layer with the tomato pizza pasta, ricotta, spinach, salami pieces, cherry tomatoes, olives, mixed herbs and feta. Grill in the grill section of the oven (on high) for approx 5-8 mins. Just watch it doesn’t burn. You can also roast in the oven on high for approx 15 mins.

  4. Drizzle on some olive oil, scatter with basil leaves and season well.

The mixed herbs I used are from the fruit/veg section of the supermarket. They are in a sachet and are lightly dried (so they last for 4 weeks in your fridge). Mine were a mix of parsley, basil & oregano. But you can use any fresh or dried herbs that you have (or just basil)!
