DUMPLING SOUP

Perfect for a cold day!! This soup is so simple and amazingly full of flavour (for how simple it is).

Serves 4

Ingredients:

  • 2 litres chicken stock (or bone broth)

  • 2 inch piece of peeled ginger, cut into large slices

  • 3 garlic cloves, smashed

  • 2 tbsp soy sauce

  • 1 tbsp Chinese cooking wine (or rice wine)

  • 1 teaspoon sesame oil

  • 4 spring onions, sliced

  • 1 cup flat mushrooms, sliced

  • 1 bunch baby bok choy

  • 16-20 good quality store bought dumplings (I used pork dumplings)

Method:

  1. Place a large pot onto medium heat. Add the stock to the pan. Then add the ginger and garlic and stir for 2 mins to infuse. Add the soy sauce, Chinese cooking wine, sesame oil and spring onion. Stir for 2-3 minutes.

  2. Add the dumplings to the pot and submerge into the liquid. Cover with a lid and let cook for 5 minutes.

  3. Remove the lid, add the mushroom and the bok choy and stir through. Let them cook for the next 5 minutes
