RICOTTA, GOATS CHEESE & FRESH HERB DIP

Makes 3 cups

Prep time: 15 minutes

Ingredients:

  • 400 grams of Ricotta Cheese

  • 3 tablespoons of Greek yoghurt

  • 100 grams of softs goats cheese

  • Zest and juice of 1 large lemon

  • 1/4 cup of olive oil

  • 1 cup of fresh mint, leaves picked

  • 1/2 cup of fresh basil, leaves picked

  • Salt & Pepper

  • 1 teaspoon of red chilli flakes (garnish)

  • Chopped fresh herbs for garnish (any herb is fine)

  • Drizzle of honey (for sweetness)

Method:

  1. In a food processor, add the ricotta, Greek yoghurt, goats cheese, lemon zest & juice, olive oil and fresh herbs. Blend until well combined. Season well with salt and pepper.

  2. To serve – sprinkle with red chilli flakes and fresh chopped herbs. Add a drizzle of honey for sweetness.

  3. Serve with crostini, lavosh, cut fresh vegetables (baby cucumbers, snow peas, radishes, carrot, baby asparagus).
