RICOTTA, GOATS CHEESE & FRESH HERB DIP
Makes 3 cups
Prep time: 15 minutes
Ingredients:
400 grams of Ricotta Cheese
3 tablespoons of Greek yoghurt
100 grams of softs goats cheese
Zest and juice of 1 large lemon
1/4 cup of olive oil
1 cup of fresh mint, leaves picked
1/2 cup of fresh basil, leaves picked
Salt & Pepper
1 teaspoon of red chilli flakes (garnish)
Chopped fresh herbs for garnish (any herb is fine)
Drizzle of honey (for sweetness)
Method:
In a food processor, add the ricotta, Greek yoghurt, goats cheese, lemon zest & juice, olive oil and fresh herbs. Blend until well combined. Season well with salt and pepper.
To serve – sprinkle with red chilli flakes and fresh chopped herbs. Add a drizzle of honey for sweetness.
Serve with crostini, lavosh, cut fresh vegetables (baby cucumbers, snow peas, radishes, carrot, baby asparagus).
