10 MINUTE TUNA MIX WITH CANNELLINI BEANS & CORNICHONS

Love my quick tuna mixes! They can be thrown together in no time and I usually have everything on hand already. They make lunch time feel that little bit more special 🙌

Serves 2


Ingredients:

  • 180g tinned tuna, drained

  • 400g can cannellini beans, rinsed & drained

  • 3 celery rubs, finely diced

  • 1/2 spanish onion, finely diced

  • 1/2 cup cornichons , finely chopped

  • 1/3 cup fresh dill, chopped

  • 1/2 lemon, juice squeezed

  • 1 tablespoon mayonnaise

  • 2 tablespoons Greek yoghurt

  • Sea salt

  • Cracked black pepper


Method:

  1. In a large bowl, add the tuna, cannellini beans, celery, Spanish onion, cornichons, dill and fresh lemon juice. Give it all a mix until combined. Season well.

  2. For the dressing, mix together the mayonnaise and Greek yoghurt. Pour over the mix and combine all ingredients.

    Serve it on sourdough, in an avocado boat or in a wrap with some lettuce of choice. Option to top with sriracha.
