Teriyaki Salmon & Broccolini Tray Bake

Ingredients
 
 

  • 4 salmon pieces, 175g each (approx)
  • 1 tablespoon sesame oil
  • 1 bunch broccolini
  • 2 bunches bok choy
  • 3 spring onion sliced
  • 1 red chilli finely sliced
  • herb either coriander, Thai basil or Vietnamese mint

Marinade:

  • 1/2 cup water
  • 1/2 cup soy sauce
  • 1 clove garlic finely chopped
  • 3 cm ginger piece, finely chopped
  • 2 tablespoons honey
  • 1 tablespoon sesame seeds optional

Instructions
 

Method:

  • Preheat oven to 200 degrees Celsius.
  • For the marinade: mix together all ingredients in a bowl. Adjust to taste.
  • Pour about a quarter of the marinade over the salmon pieces. Drizzle some sesame oil into the oven tray. Lay the salmon pieces (skin side down) on a baking tray. Then lay the broccolini pieces around the salmon pieces. Drizzle with a little more sesame oil.
  • Roast in the oven for 10 minutes.
  • After 10 minutes, pull out the tray and scatter over the bok choy pieces (they will shrivel and burn if you add them at the beginning). Pour over the remaining marinade. Roast for a further 10 minutes until salmon is flaky and tender.
  • Remove the tray. Scatter over the spring onion, fresh chilli and fresh herbs.
  • Serve with white or brown rice.
