Teriyaki Salmon & Broccolini Tray Bake
Ingredients
- 4 pieces salmon about 175 g each
- 1 tablespoon sesame oil
- 1 bunch broccolini
- 2 bunches bok choy
- 3 spring onions sliced
- 1 red chilli finely sliced
- fresh herbs coriander, Thai basil and Vietnamese mint all work
- white or brown rice to serve
Marinade
- 1/2 cup water
- 1/2 cup soy sauce
- 1 clove garlic finely chopped
- 3 cm ginger piece finely chopped
- 2 tablespoons honey
- 1 tablespoon sesame seeds optional
Instructions
- Preheat the oven to 200°C.
- For the marinade: Mix all the ingredients in a bowl. Adjust ingredients to taste.
- Pour about one-quarter of the marinade over the salmon pieces. Drizzle some of the sesame oil onto an oven tray. Lay the salmon pieces, skin side down, on the tray. Then lay the broccolini around the salmon pieces. Drizzle with a little more sesame oil.
- Roast in the oven for 10 minutes.
- After 10 minutes, pull out the tray and scatter over the bok choy (they will shrivel and burn if you add them at the beginning). Pour over the remaining marinade and roast for a further 10 minutes until the salmon is flaky and tender.
- Remove the tray from the oven. Scatter over the spring onion, chilli and herbs. Serve with white or brown rice.
