Instructions
Preheat the oven to 200°C conventional (180°C fan-forced).
For the marinade: Mix all the ingredients in a bowl. Adjust ingredients to taste.
1/2 cup soy sauce, 1/2 cup water, 1 clove garlic, 3 cm ginger piece, 2 tablespoons honey, 1 tablespoon sesame seeds
Pour about one-quarter of the marinade over the salmon pieces. Drizzle some of the sesame oil onto an oven tray. Lay the salmon pieces, skin side down, on the tray. Then lay the broccolini around the salmon pieces. Drizzle with a little more sesame oil.
After 10 minutes, pull out the tray and scatter over the bok choy (they will shrivel and burn if you add them at the beginning). Pour over the remaining marinade and roast for a further 10 minutes until the salmon is flaky and tender.
2 bunches bok choy
Remove the tray from the oven. Scatter over the spring onion, chilli and herbs. Serve with white or brown rice.
