One Pot, Quick & Easy Vegetarian Pasta
What a fantastic dish! It is ready in under 30 minutes, plus it's vegetarian and is made in one pot!Comforting, hearty, very healthy and super moreish. The perfect weeknight meal and great for kids too.
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 zucchini large, diced
- 1 red capsicum diced
- 3 cloves garlic finely chopped
- 200 g cherry tomatoes halved
- 1 tablespoon italian herbs dried
- 500 g pasta sauce jar of your choice
- 2 cups pasta dried, I used orecchiette
- 2 cups water
- 2 cups baby spinach
- 1 handful basil leaves
- 1 cup parmesan cheese grated
- sea salt & cracked black pepper
Instructions
- Place a medium–large saucepan over medium heat. Add the olive oil, zucchini, capsicum, garlic, cherry tomatoes and italian herbs and sauté for 5–6 minutes or until the veggies are caramelised and fragrant.
- Add the pasta sauce to the pan and stir through. Then add the dried pasta and water. Bring to the boil, partially cover the saucepan with a lid and turn the heat down to low. Simmer for 10–15 minutes until the pasta is just cooked and the sauce has thickened up a bit. Turn off the heat.
- Add the baby spinach, basil and grated parmesan and season really well.
