ONE POT, QUICK & EASY VEGETARIAN PASTA

What a fantastic dish!!

It can be made in under 30 mins, it’s vegetarian and made in one pot!!

Comforting, hearty, very healthy and super moorish. Perfect weeknight meal and great for kids too.

Serves 4

Ingredients:

  • 1 tbsp extra virgin olive oil

  • 1 large zucchini, diced

  • 1 red capsicum, diced

  • 3 cloves garlic, finely chopped

  • 200g punnet cherry tomatoes

  • 1 tbsp dried Italian herbs

  • 500g jar of pasta sauce (your choice)

  • 2 cups dried pasta (I used orecchiette)

  • 2 cups water

  • 2 cups baby spinach

  • Handful fresh basil

  • 1 cup fresh parmesan, grated

  • Sea salt

  • Pepper

Method:

  1. Place a med/large saucepan onto to medium heat. Add the olive oil to the saucepan, add the zucchini, red capsicum, garlic, cherry tomatoes, and dried Italian herbs and sauté for 5-6 mins (until veggies are caramelised and fragrant).

  2. Add the pasta sauce to the saucepan and stir through. Then add the dried pasta, along with 2 cups of water. Bring to a boil, partially cover the saucepan with a lid, and turn right down to low heat. Simmer the pasta for 10-15 mins until the pasta is just cooked and the sauce has thickened up a bit. Turn off the heat.

  3. Add the baby spinach, fresh basil, and grated parmesan and season really well.
