Amazing One Pot Lasagna

This is a fantastic recipe! If you’ve ever made traditional lasagna before, it can take forever! Using different pots, layering with bolognese sauce, bechamel, lasagna sheets… just too time consuming.
This recipe saves so much time and still allows you to enjoy the taste of a traditional lasagna. Perfect for the whole family.
It also freezes beautifully, so make a pot and freeze what you don’t eat.

Ingredients
 
 

  • 3 tablespoons extra virgin olive oil
  • 2 brown onions medium, finely chopped
  • 3 cloves garlic finely chopped
  • 1 carrot grated
  • 1 zucchini grated, optional
  • 1 kg beef mince
  • 2 bay leaves optional
  • 2 tablespoons tomato paste
  • 400 g canned crushed tomatoes
  • 700 g passata
  • 1 beef stock cube
  • 1 1/2 cups water
  • sea salt & cracked black pepper
  • 1 packet lasagna sheets fresh
  • 250 g mozzarella cheese or fresh mozzarella, cut into thick slices
  • basil leaves to serve

Instructions
 

  • Preheat the oven to 180°C.
  • Heat the olive oil in a large ovenproof pot or skillet over medium heat. Add the onion and stir for 2–3 minutes. Add the garlic and cook, stirring, for another 2–3 minutes. Then add the grated veggies and stir once more for 2–3 minutes.
  • Increase the heat to high and add the beef mince in chunks. Use a wooden spoon to break the mince up for about 5 minutes. Add the bay leaves (if using), tomato paste, canned tomatoes, passata and beef stock cube. Refill the passata bottle with the water, shake it and pour into the sauce. Season well and simmer for 10 minutes to develop the flavour.
  • Turn the heat down to a simmer. Tear the fresh lasagna sheets in half and submerge them in the sauce, one at a time. Use a wooden spoon to gently push them to the bottom. Continue with the rest of the sheets, filling the empty spaces and covering with the sauce. Top the lasagna with mozzarella slices.
  • Place the lid on the pot and bake for 15–20 minutes. Remove the lid and sprinkle over the basil. Serve.

Notes

Make sure you use a pot or pan that is about 28-30 cm and that can fully be put into the oven (handle too).
