Avocado & Chickpea Salad
Throw this together in under 10 minutes. Super simple and wholesome for your busy weekday.
Ingredients
- 400 g canned chickpeas drained & rinsed
- 1 avocado large, diced
- 1/3 cup coriander leaves chopped
- 2 tablespoons spring onion finely chopped
- 1/4 cup feta cheese or goat's cheese
- 1 lime juice squeezed
- sea salt & cracked black pepper
Instructions
- Mix all the ingredients in a bowl. Season with salt and pepper and enjoy!
- If you want more substance, feel free to serve this salad on wholemeal toast, rice crackers or corn thins.
