AVOCADO & CHICKPEA SALAD
Throw this together in under 10 minutes. Super simple and wholesome for your busy weekday.
Ingredients:
1 can of chickpeas, rinsed and drained.
1 large avocado, chopped
1/3 cup chopped coriander
2 tablespoons spring onion, finely chopped
1/4 cup feta cheese or goats cheese
Juice of 1 lime
Method:
Mix all together in a bowl and enjoy! Season with salt and pepper.
If you want more substance, feel free to serve on wholemeal toast or rice crackers/corn thins.
