CHERRY TOMATO, CHEESE & SPINACH EGG TORTILLA QUICHE
Serves 2
Ingredients:
1 large Tortilla
4 eggs, lightly whisked
1/2 cup cottage cheese
1/2 cup cherry toms, halved
2 spring onion, finely chopped
Handful spinach, chopped
1/2 cup grated mozzarella
Pinch of salt and pepper
Method:
1. Preheat oven to 175 degrees celsius (fan forced).
2. Using a 20cm shallow oven/cake tin, place the tortilla into the pan and gently push down to create a case.
3. Add the spinach, cherry tomatoes and spring onion to the cake tin. Combine the eggs, salt, pepper and cottage cheese and then pour into the tin (gently bang the tin on a surface to allow the egg to spread). Top with grated cheese and season well.
4. Bake for 30 minutes. Remove, cut and enjoy.
Air Fryer Method: preheat to 175 degrees and cook for 20 minutes
