Cherry Tomato, Cheese & Spinach Egg Tortilla Quiche

- 1 tortilla large
- 1 cup baby spinach chopped
- 1/2 cup cherry tomatoes halved
- 2 spring onions finely chopped
- 4 eggs whisked
- 1/2 cup cottage cheese
- sea salt & cracked black pepper
- 1/2 cup mozzarella cheese grated
Instructions
- Preheat the oven to 195°C conventional (175°C fan-forced).
- Using a 20 cm shallow oven or cake tin, place the tortilla in the tin and gently push down to create a case.
- Add the spinach, cherry tomatoes and spring onion to the tin. Combine the whisked egg, cottage cheese, salt and pepper in a bowl, then pour into the tin (gently bang the tin on a surface to allow the egg to spread). Top with the grated cheese and season well.
- Bake for 30 minutes. Remove, cut and enjoy.
