Preheat the oven to 195°C conventional (175°C fan-forced).
Using a 20 cm shallow oven or cake tin, place the tortilla in the tin and gently push down to create a case.

Add the spinach, cherry tomatoes and spring onion to the tin. Combine the whisked egg, cottage cheese, salt and pepper in a bowl, then pour into the tin (gently bang the tin on a surface to allow the egg to spread). Top with the grated cheese and season well.
