Chicken, Basil & Cheese Egg Flip
Ingredients
- 1 tortilla medium/large
- 1/2 cup cherry tomatoes halved
- 1/2 cup red capsicum finely chopped
- 1/2 cup cooked chicken shredded or chopped
- 2–3 spring onions finely sliced
- 1 teaspoon Italian herbs
- handful basil leaves
- 1/2 cup mozzarella cheese grated
- 1 tablespoon sweet chilli sauce
- 2–3 eggs whisked
Instructions
- Place a large frying pan (one that is about the size of the tortilla) over medium heat. Add the cherry tomatoes and capsicum and cook for 2–3 minutes. Then stir through the chicken, spring onion, Italian herbs, basil, grated cheese and sweet chilli sauce. Pour the whisked egg into the pan. Cook for 3–4 minutes.
- Place the tortilla on top of the egg, then flip the egg and tortilla over with a spatula or dinner plate, so that the egg is facing up.
- Fold the right half of the tortilla over so it sits on top of the left and remove from the pan. Slice into wedges and enjoy.
