CHICKEN, BASIL & CHEESE EGG FLIP
Serves 1
Ingredients:
1 medium/large tortilla
2-3 eggs, whisked
1/2 cup cherry tomatoes, halved
1/2 cup red capsicum, finely chopped
1 tablespoon sweet chilli sauce
1 teaspoon dried Italian herbs
2-3 spring onion, finely sliced
1/2 cup cooked chicken
Small handful basil leaves
1/2 cup, grated cheese
Method:
Place a large frying pan (one that is about the size of the tortilla) onto medium heat. Add the cherry tomatoes, capsicum and let them cook for 2-3 minutes. Then add chicken, spring onion, Italian herbs, basil, shredded cheese. Whisk the eggs. Pour the eggs onto all the ingredients in the pan. Cook for 3-4 minutes.
Place the tortilla on top of the eggs, then flip the tortilla over with a spatula or dinner plate, so that the egg is facing up.
Fold the right half of the tortilla over so it sits on top of the left side and remove from the pan. Slice into wedges and enjoy.
