What a fantastic dish! It is ready in under 30 minutes, plus it's vegetarian and is made in one pot!Comforting, hearty, very healthy and super moreish. The perfect weeknight meal and great for kids too.
Place a medium–large saucepan over medium heat. Add the olive oil, zucchini, capsicum, garlic, cherry tomatoes and italian herbs and sauté for 5–6 Minuten or until the veggies are caramelised and fragrant.
1 tablespoon extra virgin olive oil, 1 zucchini, 1 red capsicum, 3 cloves garlic, 200 g cherry tomatoes, 1 tablespoon italian herbs
Add the pasta sauce to the pan and stir through. Then add the dried pasta and water. Bring to the boil, partially cover the saucepan with a lid and turn the heat down to low. Simmer for 10–15 Minuten until the pasta is just cooked and the sauce has thickened up a bit. Turn off the heat.
500 g pasta sauce, 2 cups pasta, 2 cups water
Add the baby spinach, basil and grated parmesan and season really well.
