What a fantastic dish! It is ready in under 30 minutes, plus it's vegetarian and is made in one pot!Comforting, hearty, very healthy and super moreish. The perfect weeknight meal and great for kids too.
Place a medium–large saucepan over medium heat. Add the olive oil, zucchini, capsicum, garlic, cherry tomatoes and italian herbs and sauté for 5–6 minutes or until the veggies are caramelised and fragrant.
Add the pasta sauce to the pan and stir through. Then add the dried pasta and water. Bring to the boil, partially cover the saucepan with a lid and turn the heat down to low. Simmer for 10–15 minutes until the pasta is just cooked and the sauce has thickened up a bit. Turn off the heat.
Add the baby spinach, basil and grated parmesan and season really well.
