KALE, BROCCOLINI & GOATS CHEESE SALAD
ONLY 5 ingredients!!
The texture of this salad is soooo good!! Chewy from the goji berries and crunchy from the roasted almonds. It’s a real winner!
I totally get that not everyone likes kale (I actually do), so feel free to use spinach, cos, rocket or whatever green leaf you prefer.

Ingredients:
2 cups of kale or spinach, roughly chopped (I use half of each)
1 bunch broccolini
1/4 cup of goji berries
1/2 cup of almonds, roasted and roughly chopped
150 grams of goats cheese, crumbled
Dressing:
1/3 cup of olive oil
1/4 cup of red wine vinegar
1/4 cup of honey
Salt & Pepper
Method:
Preheat the oven to 160 degrees. Spread the almonds on a baking tray and roast for 10-15 minutes or until starting to brown.
Bring a small saucepan to a boil and blanch the broccolini for 2-3 minutes. Remove, drain and run under cold water. Roughly chop. You can also do this in a small bowl of water in the microwave for 3-4 mins. Remove, drain and run under cold water.
For the salad: Combine the spinach/kale, broccolini, goji berries, chopped almonds and goat’s cheese together. Mix well.
For the dressing: Combine all ingredients and mix well. Adjust to taste
