Kale, Broccolini & Goats Cheese Salad
ONLY 5 ingredients!!The texture of this salad is soooo good!! Chewy from the goji berries and crunchy from the roasted almonds. It’s a real winner! I totally get that not everyone likes kale (I actually do), so feel free to use spinach, cos, rocket or whatever green leaf you prefer.Prep time: 15 minsCook time: 15 mins
Ingredients
- 2 cups kale or spinach, roughly chopped (I use half of each)
- 1 bunch broccolini
- 1/4 cup goji berries
- 1/2 cup almonds roasted and roughly chopped
- 150 g goats cheese crumbled
Dressing:
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1/4 cup honey
- sea salt
- cracked black pepper
Instructions
Method:
- Preheat the oven to 160 degrees. Spread the almonds on a baking tray and roast for 10-15 minutes or until starting to brown.
- Bring a small saucepan to a boil and blanch the broccolini for 2-3 minutes. Remove, drain and run under cold water. Roughly chop. You can also do this in a small bowl of water in the microwave for 3-4 mins. Remove, drain and run under cold water.
- For the salad: Combine the spinach/kale, broccolini, goji berries, chopped almonds and goat’s cheese together. Mix well.
- For the dressing: Combine all ingredients and mix well. Adjust to taste
