Kale, Broccolini & Goat’s Cheese Salad

This salad only has five ingredients and the texture is so good! Chewy from the goji berries and crunchy from the roasted almonds. It’s a real winner!
I totally get that not everyone likes kale, so feel free to use spinach, cos, rocket or whatever green leaf you prefer.

Ingredients
 
 

  • 1 bunch broccolini
  • 2 cups kale or spinach, roughly chopped (I use half of each)
  • 1/4 cup goji berries
  • 1/2 cup almonds roasted, roughly chopped
  • 150 g goat's cheese crumbled

Dressing

  • 1/3 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup honey
  • sea salt & cracked black pepper

Instructions
 

  • Bring a small saucepan of water to the boil and blanch the broccolini for 2–3 minutes. Drain and run under cold water, then roughly chop. You can also do this in a small bowl of water in the microwave for 3–4 minutes.
  • For the dressing: Combine all the ingredients and season well. Adjust to taste.
  • Combine the broccolini, kale and/or spinach, goji berries, almonds and goat’s cheese in a large bowl. Pour over the dressing and gently toss.
