This salad only has five ingredients and the texture is so good! Chewy from the goji berries and crunchy from the roasted almonds. It’s a real winner! I totally get that not everyone likes kale, so feel free to use spinach, cos, rocket or whatever green leaf you prefer.Prep time: 15 minutes
2cupskale or spinach, roughly chopped (I use half of each)
1/4cupgoji berries
1/2cupalmondsroasted, roughly chopped
150ggoat's cheesecrumbled
Dressing
1/3 cupolive oil
1/4 cup red wine vinegar
1/4 cuphoney
Salt & Pepper
Instructions
Bring a small saucepan of water to the boil and blanch the broccolini for 2–3 minutes. Drain and run under cold water, then roughly chop. You can also do this in a small bowl of water in the microwave for 3–4 minutes.
1 bunch broccolini
For the dressing: Combine all the ingredients and season well. Adjust to taste.
1/3 cup olive oil, 1/4 cup red wine vinegar, 1/4 cup honey, Salt & Pepper
Combine the broccolini, kale and/or spinach, goji berries, almonds and goat’s cheese in a large bowl. Pour over the dressing and gently toss.
