My Mediterranean Chicken Mix
A quick and flavoursome mix, this is a little richer than my other mixes so make this on a day when you feel like something heartier.You can serve this on sourdough toast, as a salad, in red capsicum shells, on roasted sweet potato, in a wrap (toasted is delicious) or in lettuce cups.
Ingredients
- 1/2 cup sun-dried tomatoes in oil, roughly chopped
- 1/2 red onion finely diced
- 1/2 cup pitted olives mixed, roughly chopped
- 1/2 cup jarred roasted red peppers chopped
- 80 g danish feta cheese crumbled
- 1 cup roasted chicken shredded
- 2 cups baby spinach or rocket, finely chopped
- 2 tablespoons basil leaves shredded (optional)
- 1/2 lemon juice squeezed
- cracked black pepper no salt needed as there is a lot in the antipasto ingredients
Instructions
- In a medium bowl, mix all the ingredients well. Serve the mix on any of the above suggestions or enjoy on its own.
