MY MEDITERRANEAN CHICKEN MIX
A quick and flavoursome mix, it’s a little richer than the other mixers so make this on a day when you feel you need something more than a really light mix.
You can serve this on:
Sourdough toast
As a salad
In red capsicum shells (red peppers)
On roasted sweet potato
In a wrap (toasted is delicious)
In lettuce cups
Serves 2
Ingredients:
1/2 cup of sun dried tomatoes in oil, roughly chopped
1/2 red onion, finely diced
1/2 cup of mixed pitted olives, roughly chopped
1/2 cup jarred roasted peppers, chopped
80g danish feta, crumbled
1 cup of shredded chicken (store bought)
2 cups spinach or rocket, finely chopped
2 tbsp basil, shredded (optional)
1/2 lemon, juice squeezed
Pepper (this mix doesn’t really need salt as you get a lot from the antipasto ingredients).
Method:
In a medium sized bowl, mix together all ingredients. Serve on any of the above suggestions or have on its own.
