CHICKPEA, AVOCADO & CUCUMBER MIX/SALAD

Ingredients:
400g canned chickpeas, drained & rinsed
1 avocado
1 lebanese cucumber, finely diced
½ small red onion, finely diced
1/4 cup parsley, chopped
1 tablespoon extra virgin olive oil
1 lemon, juice squeezed
Method:
Place the chickpeas and avocado in a medium sized bowl. Use a potato masher or fork to mash it all together and give it a stir. Add the lebanese cucumber, red onion and parsley. Then add the olive oil and lemon juice. Season well and gently mix it all together.
