Chickpea, Avocado & Cucumber Mix/Salad

Whip this yummy mix up in 10 minutes. You can serve it as a dip, enjoy it in a wrap or have it on its own as a salad.

Ingredients
  

  • 400 g canned chickpeas drained & rinsed
  • 1 avocado
  • 1 lebanese cucumber finely diced
  • 1/2 red onion small, finely diced
  • 1/4 cup parsley leaves chopped
  • 1 tablespoon extra virgin olive oil
  • 1 lemon juice squeezed
  • sea salt & cracked black pepper

Instructions
 

  • Place the chickpeas and avocado in a medium bowl. Use a potato masher or fork to roughly mash them together.
    400 g canned chickpeas, 1 avocado
  • Add the cucumber, red onion and parsley. Then drizzle in the olive oil and lemon juice. Season well and gently mix it all together.
    1 lebanese cucumber, 1/2 red onion, 1/4 cup parsley leaves, 1 tablespoon extra virgin olive oil, 1 lemon
