Chickpea, Avocado & Cucumber Mix/Salad

Ingredients
- 400 g canned chickpeas drained & rinsed
- 1 avocado
- 1 lebanese cucumber finely diced
- 1/2 red onion small, finely diced
- 1/4 cup parsley leaves chopped
- 1 tablespoon extra virgin olive oil
- 1 lemon juice squeezed
- sea salt & cracked black pepper
Instructions
- Place the chickpeas and avocado in a medium bowl. Use a potato masher or fork to roughly mash them together.400 g canned chickpeas, 1 avocado
