Chickpea, Avocado & Cucumber Mix/Salad
Whip this yummy mix up in 10 minutes. You can serve it as a dip, enjoy it in a wrap or have it on its own as a salad.
Ingredients
- 400 g canned chickpeas drained & rinsed
- 1 avocado
- 1 lebanese cucumber finely diced
- 1/2 red onion small, finely diced
- 1/4 cup parsley leaves chopped
- 1 tablespoon extra virgin olive oil
- 1 lemon juice squeezed
- sea salt & cracked black pepper
Instructions
- Place the chickpeas and avocado in a medium bowl. Use a potato masher or fork to roughly mash them together.
- Add the cucumber, red onion and parsley. Then drizzle in the olive oil and lemon juice. Season well and gently mix it all together.
