Chickpea, Avocado & Cucumber Mix/salad

Whip this yummy mix up in 10 minutes.You can serve it as a dip, enjoy it in a wrap or have it on its own.

Ingredients
 
 

  • 400 g canned chickpeas drained & rinsed
  • 1 avocado
  • 1 lebanese cucumber finely diced
  • ½ red onion small, finely diced
  • 1/4 cup parsley chopped
  • 1 tablespoon olive oil extra virgin
  • 1 lemon juice squeezed

Instructions
 

Method:

  • Place the chickpeas and avocado in a medium sized bowl. Use a potato masher or fork to mash it all together and give it a stir. Add the lebanese cucumber, red onion and parsley. Then add the olive oil and lemon juice. Season well and gently mix it all together.
