CHICKPEA, AVOCADO & CUCUMBER MIX/SALAD

Whip this yummy mix up in 10 minutes.
You can serve it as a dip, enjoy it in a wrap or have it on its own.

Serves 2


Ingredients:

  • 400g canned chickpeas, drained & rinsed

  • 1 avocado

  • 1 lebanese cucumber, finely diced

  • ½ small red onion, finely diced

  • 1/4 cup parsley, chopped

  • 1 tablespoon extra virgin olive oil

  • 1 lemon, juice squeezed


Method:

  1. Place the chickpeas and avocado in a medium sized bowl. Use a potato masher or fork to mash it all together and give it a stir. Add the lebanese cucumber, red onion and parsley. Then add the olive oil and lemon juice. Season well and gently mix it all together.
