Creamy Chicken & Pasta Salad
I was never a fan of pasta salads, until I experimented and found that pasta salads can be absolutely delicious if you find a good recipe with ingredients you love. This is one of those recipes. I LOVE it and it’s totally changed my view on pasta salads.Enjoy it for lunch, dinner or take it to your next event when you’re asked to bring a plate of something. It’s SO YUM!!!!!
Ingredients
- 1.5 cups pasta cooked
- 1 cup rocket leaves
- 3/4 cup cherry tomatoes quartered
- 2 lebanese cucumbers chopped
- 1 cup chicken shredded, cooked
- 1/4 cup pine nuts toasted
- 1/4 cup goats cheese crumbled
- 1/2 cup parmesan cheese grated
Dressing:
- 1 cup basil leaves
- 2 spring onion chopped
- 1 clove garlic
- 1/2 lemon juice squeezed
- 1/2 avocado
- 2 tablespoons greek yoghurt or natural yogurt
- sea salt
- cracked black pepper
Instructions
Method:
- For the salad: Add all ingredients, except the parmesan cheese, to a large bowl and combine well.
- For the dressing: Place all ingredients in a blender, food processor or mortar & pestle and blend/grind until combined. Then stir through the Greek yoghurt.
- Drizzle the dressing all over the salad and mix well to combine. Then sprinkle over the grated parmesan cheese.
