Creamy Chicken & Pasta Salad
I was never a fan of pasta salads, until I experimented and found that they can be absolutely delicious if you find a good recipe with ingredients you love. This is one of those recipes. It’s totally changed my view on pasta salads.Enjoy it for lunch or dinner, or take it to your next event when you’re asked to bring a plate to share. It’s SO yum!

Ingredients
- 1 1/2 cups cooked pasta
- 1 cup rocket leaves
- 3/4 cup cherry tomatoes quartered
- 2 lebanese cucumbers chopped
- 1 cup cooked chicken shredded
- 1/4 cup pine nuts toasted
- 1/4 cup goat's cheese crumbled
- 1/2 cup parmesan cheese grated
Dressing
- 1 cup basil leaves
- 2 spring onions chopped
- 1 clove garlic finely chopped
- 1/2 lemon juice squeezed
- 1/2 avocado
- sea salt & cracked black pepper
- 2 tablespoons greek yoghurt or natural yoghurt
Instructions
- For the salad: Place all the ingredients, except the parmesan cheese, in a large bowl and combine well.
- For the dressing: Place all the ingredients, except the yoghurt, in a blender or food processor and blend until combined. Transfer to a bowl and stir through the yoghurt.
- Drizzle the dressing over the salad and mix well to combine. Sprinkle over the parmesan cheese and serve.
