Creamy Chicken & Pasta Salad
I was never a fan of pasta salads, until I experimented and found that they can be absolutely delicious if you find a good recipe with ingredients you love. This is one of those recipes. It’s totally changed my view on pasta salads.Enjoy it for lunch or dinner, or take it to your next event when you’re asked to bring a plate to share. It’s SO yum!

Ingredients
- 1.5 cups pasta cooked
- 1 cup rocket
- 3/4 cup cherry tomatoes quartered
- 2 lebanese cucumbers chopped
- 1 cup cooked chicken shredded
- 1/4 cup pine nuts toasted
- 1/4 cup goats cheese crumbled
- 1/2 cup parmesan grated
Dressing:
- 1/2 cup basil pesto store-bought or home made
- 2 tbsp natural/Greek yoghurt
- Salt & Pepper
Instructions
- For the salad: Add all ingredients, except the parmesan cheese, to a large bowl and combine well.
- For the dressing: Mix together the pesto and greek yoghurt. Add a teaspoon or two of water to create a thinner consistency. Season well.
- Drizzle the dressing all over the salad and mix well to combine. Then sprinkle over the grated parmesan cheese.
