Creamy Chicken & Pasta Salad

I was never a fan of pasta salads, until I experimented and found that pasta salads can be absolutely delicious if you find a good recipe with ingredients you love. This is one of those recipes. I LOVE it and it’s totally changed my view on pasta salads.
Enjoy it for lunch, dinner or take it to your next event when you’re asked to bring a plate of something. It’s SO YUM!!!!!

Ingredients
 
 

  • 1.5 cups pasta cooked
  • 1 cup rocket leaves
  • 3/4 cup cherry tomatoes quartered
  • 2 lebanese cucumbers chopped
  • 1 cup chicken shredded, cooked
  • 1/4 cup pine nuts toasted
  • 1/4 cup goats cheese crumbled
  • 1/2 cup parmesan cheese grated

Dressing:

  • 1 cup basil leaves
  • 2 spring onion chopped
  • 1 clove garlic
  • 1/2 lemon juice squeezed
  • 1/2 avocado
  • 2 tablespoons greek yoghurt or natural yogurt
  • sea salt
  • cracked black pepper

Instructions
 

Method:

  • For the salad: Add all ingredients, except the parmesan cheese, to a large bowl and combine well.
  • For the dressing: Place all ingredients in a blender, food processor or mortar & pestle and blend/grind until combined. Then stir through the Greek yoghurt.
  • Drizzle the dressing all over the salad and mix well to combine. Then sprinkle over the grated parmesan cheese.
