Lentil, Green Bean, Dill & Haloumi Salad
Ingredients
- 1.5 cups french lentils rinsed
- 2 red capsicums diced
- 2 cups green beans trimmed and roughly chopped
- 200 g cherry tomatoes halved
- 1 cup dill finely chopped
- 200 g halloumi cheese cut into thin cubes
Dressing:
- 2 tablespoons olive oil extra virgin
- 2 tablespoons lemon juice
- 1/2 teaspoon dijon mustard
- 1/2 teaspoon dried cumin
- sea salt
- cracked black pepper
Instructions
- Place a medium saucepan of water onto boil. Once boiled, add the lentils and cook for approx. 15 mins (check packet). Drain, run through cold water and set aside.
- For the dressing: Mix together all ingredients. Season well and adjust to taste.
- For the salad: In a large bowl, add lentils, capsicum, green beans, cherry tomatoes, dill. Add half the dressing to the salad and give it a good toss.
- Place a medium frying pan onto medium heat. Add a drizzle of olive oil and add the halloumi pieces. Cook for approx. 2-3 minutes each side, until golden and hated through. Add the halloumi pieces to the salad. Drizzle over the remaining dressing.
