Chicken Pasta Salad With A Creamy Dill Dressing
Ingredients
- 2 cups pasta cooked, I used spirals
- 1 cup spinach chopped
- 2 cups chicken cooked, chopped
- 1 lebanese cucumber diced
- 1.5 cups cherry tomatoes halved
- 1/2 cup sun-dried tomatoes chopped
- 1/2 red onion finely diced
- 1/2 cup parsley chopped
- 1/3 cup feta cheese crumbled
Creamy Dill Dressing:
- 1/2 greek yoghurt
- 1 teaspoon onion powder
- 1/4 cup dill chopped
- 1 teaspoon garlic minced, jarred or fresh
- 2 tablespoons apple cider vinegar
- 1 tablespoon olive oil extra Virgin
- sea salt
- cracked black pepper
Instructions
Method:
- To a large bowl: Add cooked pasta, spinach, chicken, cucumber, cherry tomatoes, sun-dried tomatoes, red onion, parsley and feta. Toss all ingredients together and season well.
- For the dressing: Mix all ingredients together in a small bowl or jug. Adjust to taste. If you feel it’s too thick, you can add a teaspoon of water at a time until you reach your desired consistency.
- Pour the dressing all over the salad. Toss gently to combine. Check seasoning and enjoy!
