Chicken Pasta Salad With A Creamy Dill Dressing

Ingredients
 
 

  • 2 cups cooked pasta I used spirals
  • 1 cup baby spinach chopped
  • 2 cups cooked chicken chopped
  • 1 lebanese cucumber diced
  • 1 1/2 cups cherry tomatoes halved
  • 1/2 cup sun-dried tomatoes chopped
  • 1/2 red onion finely diced
  • 1/2 cup parsley leaves chopped
  • 1/3 cup feta cheese crumbled
  • sea salt & cracked black pepper

Creamy Dill Dressing

  • 1/2 cup greek yoghurt
  • 1 teaspoon onion powder
  • 1/4 cup dill chopped
  • 1 teaspoon garlic minced, jarred or fresh
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon extra virgin olive oil

Instructions
 

  • Place the cooked pasta, spinach, chicken, cucumber, cherry tomatoes, sun-dried tomatoes, red onion, parsley and feta in a large bowl. Toss together and season well.
  • For the dressing: Mix all the ingredients in a small bowl or jug. Adjust to taste. If you feel it’s too thick, you can add a teaspoon of water at a time until you reach your desired consistency.
  • Pour the dressing over the salad. Toss gently to combine. Check the seasoning and enjoy!
