Chicken Pasta Salad With A Creamy Dill Dressing

- 2 cups cooked pasta I used spirals
- 1 cup baby spinach chopped
- 2 cups cooked chicken chopped
- 1 lebanese cucumber diced
- 1 1/2 cups cherry tomatoes halved
- 1/2 cup sun-dried tomatoes chopped
- 1/2 red onion finely diced
- 1/2 cup parsley leaves chopped
- 1/3 cup feta cheese crumbled
- sea salt & cracked black pepper
- 1/2 cup greek yoghurt
- 1 teaspoon onion powder
- 1/4 cup dill chopped
- 1 teaspoon garlic minced, jarred or fresh
- 2 tablespoons apple cider vinegar
- 1 tablespoon extra virgin olive oil
Instructions
- Place the cooked pasta, spinach, chicken, cucumber, cherry tomatoes, sun-dried tomatoes, red onion, parsley and feta in a large bowl. - For the dressing: Mix all the ingredients in a small bowl or jug. Adjust to taste. If you feel it’s too thick, you can add a teaspoon of water at a time until you reach your desired consistency.1/2 cup greek yoghurt, 1 teaspoon onion powder, 1/4 cup dill, 1 teaspoon garlic, 2 tablespoons apple cider vinegar, 1 tablespoon extra virgin olive oil
- Pour the dressing over the salad. Toss gently to combine. Check the seasoning and enjoy!
