CHICKEN PASTA SALAD WITH A CREAMY DILL DRESSING
Serves 4
Ingredients:
2 cups cooked pasta (I used spirals)
1 cup spinach, chopped
2 cups cooked chicken, chopped
1 cucumber, diced
1.5 cups cherry tomatoes, halved
1/2 cup sun dried tomatoes, chopped
1/2 red onion, finely diced
1/2 cup parsley, chopped
1/3 cup feta, crumbled
Creamy Dill Dressing:
1/2 Greek yoghurt
1 tsp onion powder
1/4 cup dill, chopped
1 tsp minced garlic (jarred or fresh)
2 tbsp apple cider vinegar
1 tbsp extra Virgin olive oil
Sea salt & pepper
Method:
To a large bowl: Add cooked pasta, spinach, chicken, cucumber, cherry tomatoes, sun-dried tomatoes, red onion, parsley and feta. Toss all ingredients together and season well.
For the dressing: Mix all ingredients together in a small bowl or jug. Adjust to taste. If you feel it’s too thick, you can add a teaspoon of water at a time until you reach your desired consistency.
Pour the dressing all over the salad. Toss gently to combine. Check seasoning and enjoy!
