CHICKEN PASTA SALAD WITH A CREAMY DILL DRESSING

Serves 4

Ingredients:

  • 2 cups cooked pasta (I used spirals)

  • 1 cup spinach, chopped

  • 2 cups cooked chicken, chopped

  • 1 cucumber, diced

  • 1.5 cups cherry tomatoes, halved

  • 1/2 cup sun dried tomatoes, chopped

  • 1/2 red onion, finely diced

  • 1/2 cup parsley, chopped

  • 1/3 cup feta, crumbled

    Creamy Dill Dressing:

  • 1/2 Greek yoghurt

  • 1 tsp onion powder

  • 1/4 cup dill, chopped

  • 1 tsp minced garlic (jarred or fresh)

  • 2 tbsp apple cider vinegar

  • 1 tbsp extra Virgin olive oil

  • Sea salt & pepper

Method:

  1. To a large bowl: Add cooked pasta, spinach, chicken, cucumber, cherry tomatoes, sun-dried tomatoes, red onion, parsley and feta. Toss all ingredients together and season well.

  2. For the dressing: Mix all ingredients together in a small bowl or jug. Adjust to taste. If you feel it’s too thick, you can add a teaspoon of water at a time until you reach your desired consistency.

  3. Pour the dressing all over the salad. Toss gently to combine. Check seasoning and enjoy!
