Place the cooked pasta, spinach, chicken, cucumber, cherry tomatoes, sun-dried tomatoes, red onion, parsley and feta in a large bowl. Toss together and season well.
2 cups cooked pasta, 1 cup baby spinach, 2 cups cooked chicken, 1 lebanese cucumber, 1 1/2 cups cherry tomatoes, 1/2 cup sun-dried tomatoes, 1/2 red onion, 1/2 cup parsley leaves, 1/3 cup feta cheese
For the dressing: Mix all the ingredients in a small bowl or jug. Adjust to taste. If you feel it’s too thick, you can add a teaspoon of water at a time until you reach your desired consistency.
1/2 cup greek yoghurt, 1 teaspoon onion powder, 1/4 cup dill, 1 teaspoon garlic, 2 tablespoons apple cider vinegar, 1 tablespoon extra virgin olive oil
Pour the dressing over the salad. Toss gently to combine. Check the seasoning and enjoy!
