Broc Tots Recipe
Ingredients
- 250 g broccoli florets
- 3/4 cup panko breadcrumbs
- 1 cup tasty cheddar shredded
- 3 spring onions finely chopped
- 1 egg large, whisked
- 1 tablespoon butter melted
- Sea salt & cracked black pepper
- Tzatziki to serve
Instructions
- Preheat your oven to 210°C (fan-forced) and line a baking tray with baking paper.
- In a large pot, bring salted water to a boil. Add the broccoli and cook for about 2 minutes until just tender. Drain and spread the broccoli on a plate lined with paper towels to cool.
- Once cooled, finely chop the broccoli until you have 2 cups. In a medium bowl, combine the chopped broccoli with breadcrumbs, cheddar, spring onions, egg, and melted butter. Stir thoroughly with a wooden spoon until everything is well mixed. Refrigerate the mixture for 20 minutes.
- Shape the mixture into balls using about a tablespoon of the mixture for each. Wet your hands and gently press the balls into cylinder shapes, then arrange them on the prepared baking tray.
- Bake in the oven for 10 minutes or until the bottoms turn golden. Carefully flip each cylinder (some cheese may stick to the paper, so gently loosen them if needed). Continue baking for another 5 minutes, until both sides are golden. Let them cool slightly before serving with tzatziki.
