Toasted Egg Sandwich – Tomato, Avocado & Cheese
Ingredients
- 2 slices bread
- 2–3 eggs whisked
- 1 slice cheese I used swiss
- 1/2 tomato sliced
- 1 cup spinach
- 4–5 slices avocado
Instructions
- Place a medium frying pan, large enough to just fit the two slices of bread laying down flat, over medium heat. Pour in the whisked egg and let it spread to fill the pan.
- Lay the two slices of bread down in the pan, alongside each other on top of the uncooked eggs. Flip each slice of bread to coat in the egg, then cook for 3–4 minutes. Using a spatula, flip the whole egg mix and both slices of bread over to the other side.
- Lay the cheese on top of one of the slices of bread, then the tomato, spinach and avocado. Using the spatula, flip the flat side of the bread/egg (without the toppings) over to make a sandwich. Cut in half and enjoy!
