Toasted Egg Sandwich – Tomato, Avocado & Cheese
Ingredients
- 2 slices bread
- 2-3 eggs whisked
- 1 slice cheese I used swiss
- 1/2 tomato sliced
- 1 cup spinach
- 4-5 slices avocado
Instructions
- Place a medium fry pan, large enough to just fit the two pieces of bread laying down flat, onto medium heat. Pour in the eggs and let them spread to fill the pan.
- Lay the two pieces of bread down in the pan, alongside each other on top of the uncooked eggs. Then flip each piece of bread to coat in the egg. Let it cook for 3-4 minutes. Using a spatula, flip the whole egg mix and both pieces of bread over to the other side.
- Lay a piece of cheese on top of one of the pieces of bread, then the tomato slices, spinach and avocado. Using the spatula, flip the flat side of the bread/egg (without the toppings) over to make a sandwich. Cut in half and enjoy!
