Cherry Tomato, Feta & Basil Egg Flip
Ingredients
- 1 tortilla medium/large
- 1/2 cup cherry tomatoes halved
- 2 spring onions finely sliced
- 2 tablespoons sweet chilli sauce
- 1–2 tablespoons feta cheese crumbled
- sea salt & black pepper
- 2–3 eggs whisked
- small handful grated cheese mozzarella or tasty
- handful rocket
- 1/2 avocado sliced
Instructions
- Place a large frying pan (one that is about the size of the tortilla) over medium heat. Add the cherry tomatoes, spring onion, sweet chilli sauce and feta and let them cook for 2–3 minutes. Season well, then pour in the whisked egg and let it run to fill the pan. Cook for 3–4 minutes.
- Place the tortilla on top of the egg, then flip the egg and tortilla over with a spatula or dinner plate, so that the egg is facing up.
- Add the grated cheese, rocket and avocado to one side of the tortilla. Fold the right half of the tortilla over so it sits on top of the left and remove from the pan. Slice into wedges and enjoy.
