CHERRY TOMATO, FETA & BASIL EGG FLIP

Serves 1

Ingredients: 

  • 1 med/large white flour tortilla 

  • 2-3 eggs, beaten

  • 1/2 cup cherry tomatoes, halved

  • 2 spring onion, finely sliced  

  • 2 tablespoons sweet chili sauce 

  • 1-2 tablespoon feta cheese, crumbled 

  • Small handful grated cheese (mozzarella or tasty)

  • Sea salt & cracked black pepper 

Toppings:

  • Handful of rocket 

  • 1/2 avocado, sliced  

Method:

1. Place a large frying pan (one that is about the size of the tortilla) onto medium heat. Add the cherry tomatoes, spring onion, sweet chilli sauce, feta and let them cook for 2-3 minutes. Season well here. Pour in the eggs onto the pan with all other ingredients and let them run to fill the pan. Cook for 3-4 minutes.

2. Place the tortilla on top of the eggs, then flip the tortilla over with a spatula or dinner plate, so that the egg is facing up.

3. Add the shredded cheese, rocket and avocado to one side of the tortilla. Fold the right half of the tortilla over so it sits on top of the left side and remove from the pan. Slice into wedges and enjoy
