Chicken, Avocado & Halloumi Egg Flip

Ingredients
  

  • 1 tortilla medium/large
  • 1/2 cup cherry tomatoes halved
  • 4 thin slices halloumi cheese
  • 2 tablespoons sweet chilli sauce
  • 1/2 cup cooked chicken shredded
  • 2–3 eggs
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cracked black pepper
  • handful rocket
  • 1/2 avocado sliced

Instructions
 

  • Place a large frying pan (one that is about the size of the tortilla) over medium heat. Add the cherry tomatoes and halloumi and cook for 2–3 minutes. Then stir through the sweet chilli sauce and shredded chicken.

  • Whisk and season the eggs with the salt and pepper. Pour the egg into the pan and cook for 3–4 minutes.

  • Place the tortilla on top of the egg, then flip the egg and tortilla over with a spatula or dinner plate, so that the egg is facing up.

  • Add the rocket and avocado to one side of the tortilla. Fold the right half of the tortilla over so it sits on top of the left and remove from the pan. Slice into wedges and enjoy.
