- 6 eggs lightly whisked
- 200 g bacon shortcut, diced
- 1 cup self-raising flower
- 1 brown onion finely chopped
- 1 cup tasty cheese grated
- 1/2 cup extra virgin olive oil
- 2-3 zucchini about 400g & grated
Salt and pepper, to taste
Instructions
- Preheat the oven to 180°C.
- Place the grated zucchini in some paper towel and squeeze out as much liquid as possible.
- In a large bowl, combine the eggs, bacon, self-raising flour, onion, cheese, and zucchini. Season generously with salt and pepper. Mix well until combined.
- Line a baking dish with baking paper. Tip: scrunch the paper first, then smooth it out so it sits neatly in the dish.
- Pour the mixture into the lined dish and spread evenly.
- Bake for 35-40 minutes, or until golden on top and set in the centre.
- Allow to cool in the tin, then cut into slices. Store in an airtight container in the fridge.
