Zucchini Slice

Ingredients
  

  • 6 eggs lightly whisked
  • 200 g bacon shortcut, diced
  • 1 cup self-raising flower
  • 1 brown onion finely chopped
  • 1 cup tasty cheese grated
  • 1/2 cup extra virgin olive oil
  • 2-3 zucchini about 400g & grated
  • Salt and pepper, to taste

Instructions
 

  • Preheat the oven to 180°C.
  • Place the grated zucchini in some paper towel and squeeze out as much liquid as possible.

  • In a large bowl, combine the eggs, bacon, self-raising flour, onion, cheese, and zucchini. Season generously with salt and pepper. Mix well until combined.

  • Line a baking dish with baking paper. Tip: scrunch the paper first, then smooth it out so it sits neatly in the dish.
  • Pour the mixture into the lined dish and spread evenly.
  • Bake for 35-40 minutes, or until golden on top and set in the centre.
  • Allow to cool in the tin, then cut into slices. Store in an airtight container in the fridge.
