Place the grated zucchini in some paper towel and squeeze out as much liquid as possible.
In a large bowl, combine the eggs, bacon, self-raising flour, onion, cheese, and zucchini. Season generously with salt and pepper. Mix well until combined.
Line a baking dish with baking paper. Tip: scrunch the paper first, then smooth it out so it sits neatly in the dish.
Pour the mixture into the lined dish and spread evenly.
Bake for 35-40 minutes, or until golden on top and set in the centre.
Allow to cool in the tin, then cut into slices. Store in an airtight container in the fridge.
