Ingredients
  

  • 2 x 220 g Simply Wholesome Pantry instant nourish bowl lentils & ancient grains
  • 2 lebanese cucumbers finely chopped
  • 400 g canned chickpeas rinsed and drained
  • 1/2 red onion finely chopped
  • 1/2 cup parsley fresh and finely chopped
  • 1/2 cup mint roughly chopped
  • 1/2 cup almonds toasted and roughly chopped
  • 100 g feta crumbled
  • 1/3 cup extra virgin olive oil
  • 1 tablespoon tahini
  • 1 tablespoon honey
  • 1 lemon juice squeezed
  • sea salt & cracked black pepper

Instructions
 

  • Tear the pouch and heat the Simply Wholesome Pantry Nourish Bowls for just 45 seconds in the microwave. And they are ready!!!!!

  • In a large bowl, combine the SWP grains, cucumber, chickpeas, red onion, parsley, mint, and almonds.
    2 x 220 g Simply Wholesome Pantry instant nourish bowl, 2 lebanese cucumbers, 400 g canned chickpeas, 1/2 red onion, 1/2 cup parsley, 1/2 cup mint, 1/2 cup almonds
  • In a small jar or bowl, combine the olive oil, tahini, honey, lemon juice, salt, and pepper. Shake or whisk until smooth and creamy.
    1 tablespoon tahini, 1 tablespoon honey, 1 lemon, sea salt & cracked black pepper
  • When ready to serve, evenly divide the salad into 4 containers.
  • Add the crumbled feta and drizzle over the dressing just before eating.
