In a large bowl, combine the SWP grains, cucumber, chickpeas, red onion, parsley, mint, and almonds.

In a small jar or bowl, combine the olive oil, tahini, honey, lemon juice, salt, and pepper. Shake or whisk until smooth and creamy.

When ready to serve, evenly divide the salad into 4 containers.
