Hummus Dip With Pomegranate & Mint Salsa
This dip is super fresh, flavoursome and really dazzles up your standard hummus. It also take no time at all, which is perfect for when you’re entertaining.
Ingredients
- 2 cups hummus homemade or store bought
- 1 cup greek yoghurt or natural yoghurt
- 1 1/2 teaspoons ground sumac optional
- pita chips, baguette or crackers to serve
Pomegranate & Mint Salsa
- 1 lebanese cucumber small, finely diced
- 1 cup cherry tomatoes cut into quarters
- 1/2 red onion very finely diced
- 1/2 cup mint leaves finely chopped
- 1/2 pomegranate seeds removed
- 2 tablespoons pine nuts toasted
- 1/2 lemon juice squeezed, plus extra to serve
- 1 teaspoon sea salt
- 1 teaspoon cracked black pepper
Instructions
- For the salsa: Gently mix all the ingredients together in a large bowl.
- Mix the hummus and yoghurt until well combined.
- To assemble: Spread the hummus onto a plate or shallow bowl, using the back of a spoon to smooth it out and reach the edges. Top with spoonfuls of the salsa, piling it nice and high (you still want to see the hummus around the edge). Squeeze with more lemon juice and serve. You can also dust the top with a little sprinkle of sumac if you like.
- Serve with pita chips, toasted baguette, fresh baguette or normal crackers.
