GREEN GODDESS SALAD
Serves 8 (as a side)
Fresh, simple and packed with flavour from the delicious dressing.
If you need a green salad to serve alongside other bits and pieces, this is the perfect one!
Ingredients:
Salad:
1/2 iceberg lettuce, shredded
1 cos lettuce, shredded
1 lebanese cucumber, finely diced
1 avocado, diced
1/2 cup mint, finely chopped
1/4 cup chives, finely sliced
Dressing:
1 cup baby spinach
1 cup basil leaves
1 clove garlic
1/3 cup cashew nuts (or almonds)
1 lemon, zest & juice
2 tbsp chives
1/4 cup olive oil
1 tbsp white wine vinegar
Salt & Pepper
Method:
For the salad: Add all ingredients and toss together.
For the dressing: Place all dressing ingredients in a blender (or use a stick blender) and blend together.
Add the dressing to the salad little by little until it’s well coated. Gently toss.
Tip: Dress the salad very last minute. It does make the leaves wilt and get soggy after a few hours. You can have both the salad and dressing prepped earlier and just add the dressing before you serve.
Don’t forget to season 🧂
Tip 2: This can also be served as a starter dip! Just shred your cos and iceberg finer in the beginning. Serve with tortilla chips.
