GREEN GODDESS SALAD

Serves 8 (as a side)

Fresh, simple and packed with flavour from the delicious dressing.

If you need a green salad to serve alongside other bits and pieces, this is the perfect one!

Ingredients:

Salad:

  • 1/2 iceberg lettuce, shredded

  • 1 cos lettuce, shredded

  • 1 lebanese cucumber, finely diced

  • 1 avocado, diced

  • 1/2 cup mint, finely chopped

  • 1/4 cup chives, finely sliced

Dressing:

  • 1 cup baby spinach

  • 1 cup basil leaves

  • 1 clove garlic

  • 1/3 cup cashew nuts (or almonds)

  • 1 lemon, zest & juice

  • 2 tbsp chives

  • 1/4 cup olive oil

  • 1 tbsp white wine vinegar

  • Salt & Pepper

Method:

  1. For the salad: Add all ingredients and toss together.

  2. For the dressing: Place all dressing ingredients in a blender (or use a stick blender) and blend together.

  3. Add the dressing to the salad little by little until it’s well coated. Gently toss.

Tip: Dress the salad very last minute. It does make the leaves wilt and get soggy after a few hours. You can have both the salad and dressing prepped earlier and just add the dressing before you serve.

Don’t forget to season 🧂

Tip 2: This can also be served as a starter dip! Just shred your cos and iceberg finer in the beginning. Serve with tortilla chips.
