Green Goddess Salad
Fresh, simple and packed with flavour from the delicious dressing.If you need a green salad to serve alongside other bits and pieces, this is the perfect one!
Ingredients
Salad:
- 1/2 iceberg lettuce shredded
- 1 cos lettuce shredded
- 1 lebanese cucumber finely diced
- 1 avocado diced
- 1/2 cup mint finely chopped
- 1/4 cup chives finely sliced
Dressing:
- 1 cup baby spinach
- 1 cup basil leaves
- 1 clove garlic
- 1/3 cup cashews or almonds
- 1 lemon zest & juice
- 2 tablespoons chives
- 1/4 cup olive oil
- 1 tablespoon white wine vinegar
- sea salt
- cracked black pepper
Instructions
Method:
- For the salad: Add all ingredients and toss together.
- For the dressing: Place all dressing ingredients in a blender (or use a stick blender) and blend together.
- Add the dressing to the salad little by little until it’s well coated. Gently toss.
Notes
Dress the salad very last minute. It does make the leaves wilt and get soggy after a few hours. You can have both the salad and dressing prepped earlier and just add the dressing before you serve.
Don’t forget to season 🧂
This can also be served as a starter dip! Just shred your cos and iceberg finer in the beginning. Serve with tortilla chips.
