Green Goddess Salad
Fresh, simple and packed with flavour from the delicious dressing.If you need a green salad to serve alongside other bits and pieces, this is the perfect one!
Ingredients
- 1/2 iceberg lettuce shredded
- 1 cos lettuce shredded
- 1 lebanese cucumber finely diced
- 1 avocado diced
- 1/2 cup mint leaves finely chopped
- 1/4 cup chives finely sliced
Dressing
- 1 cup baby spinach
- 1 cup basil leaves
- 1 clove garlic
- 1/3 cup cashews or almonds
- 1 lemon zest & juice
- 2 tablespoons chives finely sliced
- 1/4 cup extra virgin olive oil
- 1 tablespoon white wine vinegar
- sea salt & cracked black pepper
Instructions
- Place all the salad ingredients in a large bowl and toss together.
- For the dressing: Place all the ingredients in a blender (or use a stick blender) and blend together until smooth.
- Add the dressing to the salad little by little until it’s well coated. Gently toss.
Notes
You can prep the salad and dressing ahead of time, but make sure you dress the salad just before serving – if you do it earlier the leaves will wilt and get soggy.
Don’t forget to season well! 🧂
This can also be served as a dip! Just shred your cos and iceberg more finely and serve with tortilla chips.
