Easy Six-ingredient Pasta Salad
Super easy and quick – this one is a great recipe when you have a busy week. Both my daughters LOVE it too, so it’s great for a lunchbox item or for a meal.
Ingredients
- 1 cup cooled pasta or grain of choice
- 1 cup spinach chopped
- 1 cup cherry tomatoes halved
- 2 lebanese cucumbers diced
- 400 g canned tuna drained
- 3 spring onions finely chopped
Dressing:
- 3 tablespoons greek yoghurt or natural yogurt
- 2 tablespoons pesto
- sea salt
- cracked black pepper
Instructions
Method:
- For the dressing: mix together the natural yoghurt and pesto in a bowl/jug. Season with salt & pepper.
- To a large bowl: add pasta, spinach, cherry tomatoes, cucumber, tuna and spring onion. Add the dressing to the salad and toss to combine. Add some more seasoning if you like.
