Easy 6-Ingredient Pasta Salad

Super easy and quick – this is a great recipe when you have a busy week. Both my daughters love it too, so it’s fabulous for either a lunchbox item or meal.

Ingredients
 
 

  • 1 cup cooked pasta or grain of choice
  • 1 cup baby spinach chopped
  • 1 cup cherry tomatoes halved
  • 2 lebanese cucumbers diced
  • 400 g canned tuna drained
  • 3 spring onions finely chopped

Dressing

  • 3 tablespoons greek yoghurt or natural yoghurt
  • 2 tablespoons pesto
  • sea salt & cracked black pepper

Instructions
 

  • For the dressing: Mix the yoghurt and pesto in a bowl or jug. Season with salt and pepper.
  • To a large bowl: Add the pasta, spinach, cherry tomatoes, cucumber, tuna and spring onion. Add the dressing and toss to combine. Add some more seasoning if you like.
