DUCK FAT ROASTED POTATOES

YUM!!!!! Indulgent and more for a special occasion or when you have people over, these duck fat potatoes are INCREDIBLE!!!!
Your guests are going to be blown away!

Serves 4

Ingredients:

  • 4 large potatoes (brushed - the dirty ones)

  • 2 teaspoons sea salt flakes

  • 2 tablespoons duck fat

Method:

  1. Preheat oven to 200 degrees Celsius.

  2. Peel each potato and chop it into 6 even pieces. Place a large pot of cold water onto boil. Add 1 teaspoon sea salt. Add the potato pieces to the cold water. Bring to a boil and then turn down to a simmer. Simmer for 10 mins. Drain the potatoes, put them back into the empty pot without a lid, and let them sit to dry out for 3-5 minutes. Place the lid on the saucepan and give the potatoes a vigorous shake, to break up the edges (this will help get them crispy).

  3. In a large roasting dish, place 2 tablespoons of duck fat in the centre of the dish. Place in the oven for 5 - 7 mins until the fat has completely melted. Remove and pour the shaken potatoes into the dish (BE CAREFUL - OIL CAN SPIT). Add 1 teaspoon of sea salt flakes. Give them a gentle toss with a spatula to coat them in the duck fat.

  4. Roast potatoes in the oven for 40 minutes or until your desired crispiness.
