Indulgent and perfect for a special occasion or when you have people over, these duck fat potatoes are incredible! Your guests are going to be blown away!
Preheat the oven to 200°C conventional (180°C fan-forced).
Peel the potatoes and chop each one into six even pieces. Fill a large pot with cold water, then add the potatoes and 1 teaspoon of the sea salt. Bring to the boil, then turn down the heat and simmer for 10 minutes.

Drain the potatoes, then return them to the pot and let them sit, uncovered, for 3–5 minutes to dry out. Place the lid on the pot and give the potatoes a vigorous shake to break up the edges (this will help get them crispy).

Place the duck fat in a large roasting dish and warm in the oven for 5–7 minutes until completely melted. Add the shaken potatoes to the dish (be VERY careful as the fat can spit). Add the remaining teaspoon of sea salt and gently toss to coat the potatoes in the duck fat.
