Tuna, Chickpea, Feta & Olive Salad
A really yummy and easy lunch or dinner option.Most ingredients are normally in my fridge or cupboard, so it’s a great one to whip up when you’re short on time and want something other than a sandwich.
Ingredients
- 1 lebanese cucumber chopped
- 400 g canned chickpeas rinsed and drained
- 1 cup cherry tomatoes halved
- 1 cup green beans washed and chopped
- 185 g canned tuna drained
- 1/2 red onion sliced
- 1/2 cup kalamata olives pitted
- 60 g feta cheese crumbled
- 1/2 cup parsley roughly chopped
- 2 tablespoon olive oil extra virgin
- 1 lemon juice squeezed, juicy
- sea salt
- cracked black pepper
Instructions
Method:
- Add all ingredients to a largo bowl. Drizzle over the extra virgin olive oil and squeeze over the lemon juice. Season well and toss together.
