Tuna, Chickpea, Feta & Olive Salad

A really yummy and easy lunch or dinner option. Most of the ingredients are normally in the fridge or cupboard, so it’s a great one to whip up when you’re short on time and want something other than a sandwich.

Ingredients
  

  • 1 lebanese cucumber chopped
  • 400 g canned chickpeas drained & rinsed
  • 1 cup cherry tomatoes halved
  • 1 cup green beans chopped
  • 185 g canned tuna drained
  • 1/2 red onion sliced
  • 1/2 cup kalamata olives pitted
  • 60 g feta cheese crumbled
  • 1/2 cup parsley leaves roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 1 lemon large, juice squeezed
  • sea salt & cracked black pepper

Instructions
 

  • Place the cucumber, chickpeas, cherry tomatoes, green beans, tuna, onion, olives, feta and parsley in large bowl. Drizzle over the olive oil and squeeze over the lemon juice. Season well and toss together.
