TUNA, CHICKPEA, FETA & OLIVE SALAD

A really yummy and easy lunch or dinner option.

Most ingredients are normally in my fridge or cupboard, so it’s a great one to whip up when you’re short on time and want something other than a sandwich.

Serves 2

Ingredients:

  • 1 lebanese cucumber, chopped

  • 400g chickpeas, rinsed and drained

  • 1 cup cherry tomatoes, halved

  • 1 cup green beans, washed and chopped

  • 185g canned tuna, drained

  • 1/2 spanish onion, sliced

  • 1/2 cup kalamata olives, pitted

  • 60g feta, crumbled

  • 1/2 cup parsley, roughly chopped

  • 2 tablespoon extra virgin olive oil

  • 1 juicy lemon, juice squeezed

  • Sea salt & black pepper

Method:

  1. Add all ingredients to a largo bowl. Drizzle over the extra virgin olive oil and squeeze over the lemon juice. Season well and toss together.
