TUNA, CHICKPEA, FETA & OLIVE SALAD
A really yummy and easy lunch or dinner option.
Most ingredients are normally in my fridge or cupboard, so it’s a great one to whip up when you’re short on time and want something other than a sandwich.
Serves 2
Ingredients:
1 lebanese cucumber, chopped
400g chickpeas, rinsed and drained
1 cup cherry tomatoes, halved
1 cup green beans, washed and chopped
185g canned tuna, drained
1/2 spanish onion, sliced
1/2 cup kalamata olives, pitted
60g feta, crumbled
1/2 cup parsley, roughly chopped
2 tablespoon extra virgin olive oil
1 juicy lemon, juice squeezed
Sea salt & black pepper
Method:
Add all ingredients to a largo bowl. Drizzle over the extra virgin olive oil and squeeze over the lemon juice. Season well and toss together.
