Tuna, Chickpea, Feta & Olive Salad

A really yummy and easy lunch or dinner option.
Most ingredients are normally in my fridge or cupboard, so it’s a great one to whip up when you’re short on time and want something other than a sandwich.

Ingredients
 
 

  • 1 lebanese cucumber chopped
  • 400 g canned chickpeas rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 cup green beans washed and chopped
  • 185 g canned tuna drained
  • 1/2 red onion sliced
  • 1/2 cup kalamata olives pitted
  • 60 g feta cheese crumbled
  • 1/2 cup parsley roughly chopped
  • 2 tablespoon olive oil extra virgin
  • 1 lemon juice squeezed, juicy
  • sea salt
  • cracked black pepper

Instructions
 

Method:

  • Add all ingredients to a largo bowl. Drizzle over the extra virgin olive oil and squeeze over the lemon juice. Season well and toss together.
