A really yummy and easy lunch or dinner option. Most of the ingredients are normally in the fridge or cupboard, so it’s a great one to whip up when you’re short on time and want something other than a sandwich.
Place the cucumber, chickpeas, cherry tomatoes, green beans, tuna, onion, olives, feta and parsley in large bowl. Drizzle over the olive oil and squeeze over the lemon juice. Season well and toss together.
