- 1 yellow capsicum
- 1 red capsicum
- 4 carrots peeled
- 3 celery sticks
- 2 lebanese cucumber
Instructions
- Wash all the vegetables well.
- Slice capsicums into thin strips, cut carrots and celery into sticks, and slice cucumbers into batons.
- Place the prepared veggie sticks into airtight containers.
- Fill containers with a little water to help keep them crisp.
- Store in the fridge & they’ll stay fresh for up to a week.
Notes
Serving Suggestions:
- Pair with hummus, tzatziki, or guacamole for dipping.
- Add to lunchboxes for a crunchy side.
- Use as an easy grab-and-go snack.
