Tuna, Corn, Bean & Celery Salad

Easy, quick and really yummy! A perfect salad to make on those crazy busy days when you need something wholesome.

Ingredients
 
 

  • 400 g canned four bean mix drained & rinsed
  • 1 cup baby spinach chopped
  • 1 cup cherry tomatoes chopped
  • 400 g canned corn drained
  • 2 celery sticks finely chopped
  • 1 lebanese cucumber diced
  • 185 g canned tuna drained
  • 1/2 red onion small, finely chopped

Dressing

  • 1 tablespoon mayonnaise
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon white wine vinegar or apple cider vinegar
  • 1 lemon small, juice squeezed
  • sea salt & cracked black pepper

Instructions
 

  • For the dressing: Mix all the ingredients in a small bowl or jug. Season well.
  • For the salad: Place all the ingredients in a medium bowl and combine. Drizzle over the dressing and toss gently.
