Tuna, Corn, Bean & Celery Salad
Easy, quick and really yummy! A perfect salad to make on those crazy busy days when you need something wholesome.
Ingredients
- 400 g canned four bean mix drained & rinsed
- 1 cup spinach chopped
- 1 cup cherry tomatoes chopped
- 400 g canned corn drained
- 2 celery sticks finely chopped
- 1 lebanese cucumber diced
- 185 g canned tuna drained
- 1/2 red onion small, finely chopped
Dressing
- 1 tablespoon mayonnaise
- 1 tablespoon extra virgin olive oil
- 1 teaspoon white wine vinegar or apple cider vinegar
- 1 lemon small, juice squeezed
- sea salt & cracked black pepper
Instructions
- For the dressing: Mix all the ingredients in a small bowl or jug. Season well.
- For the salad: Place all the ingredients in a medium bowl and combine. Drizzle over the dressing and toss gently.
